These Chewy Blondie Bars should come with a warning ~ they are irresistible! This is my Grandmother Geneva’s recipe. She was always baking things ~ and I shared her cold oven pound cake here. These Chewy Blondie Bars were always a favorite at the lake when we were growing up, and now they’re an anytime tailgate favorite. 🙂
Bluwatermom made them recently for her book group, and that prompted me to make them at my house. Every bite is a memory for me. I’m trying out the new recipe card plug-in here on the blog ~ hope you like it ~ and I hope you give these a try. There are plenty of tailgates and outings yet to go this season. These are a great take-along!

- 1 box light brown sugar
- 1 stick butter, softened
- 2 cups self-rising flour
- 3 eggs
- 1 teaspoon vanilla
- 1 cup chopped nuts {pecans}
- Preheat oven to 350 degrees.
- Prep/grease 9x13 baking pan.
- Cream sugar and butter with mixer until fluffy
- Add egg and flour, alternating, and blend after each addition until combined
- Add vanilla and nuts, stir just until combined
- Bake at 350 degrees 30-35 minutes or until top is golden brown.
- Allow to cool completely before slicing into squares or bars.
- I bake this in an enameled cast iron pan and it takes 35 minutes. A metal pan will take less time, approximately 30 minutes.
These mix up by hand in just a few minutes. Cream the brown sugar and softened butter. Add the eggs and flour, alternating ~ egg, flour, egg, flour, egg ~ mixing after each addition. Then add the vanilla and nuts, and stir just to combine.
Pour into a greased 9″x13″ baking pan. I bake these in my enameled, cast iron baker.
Bake in a pre-heated 350 degree oven, for 30-35 minutes until golden brown. The center will still be very soft, but a tooth pick or cake tester should come away clean. Yes, you can even see the holes where I tested mine in the center! 🙂
Allow to cool in the pan. I run an off-set spatula around the edges after it cools a bit just to loosen. After it cools completely, you can slice in the pan, or invert and remove onto a cutting board to slip into squares. The hardest part is deciding whether to sample an edge, corner or center slice!
