Happy Saturday y’all and I’ve got a quick SCBD tip {small change, big difference} to share with you for the grill. If you like to grill fish, but hate when your beautiful fillets stick or burn, you’re going to LOVE this tip!
We grilled up some marinated salmon fillets last week when visiting Bluwatermom ~ and these are quick iPhone pics from standing at mom’s tiny grill. No beauty shots here ~ just a great tip! I also grilled our fave sides ~ asparagus and pineapple. 🙂
So here it is ~ slice up some citrus, brush lightly with oil and put the slices on the grill to serve as a bed for your fish fillets! The fillets don’t stick and turn out beautifully. I used lemons, and oranges work well too depending on the flavor you want in your dish. You’ll want medium thick slices. Too thin and they burn up ~ too thick and they hinder the cooking time ~ so medium does it.
Put the slices on the grill for a few minutes to warm them up, and then place the fillets on top of them. Close the grill and “bake” the fish for a few minutes ~ for roughly half of the total cook time. I baked our small fillets on the closed grill for 4 minutes to start, with the closed grill temp around 350/375. Then flip the fish over to the other side, still on top of the citrus slices ~ close the grill top and “bake” for most of the remaining time ~ saving 1 or 2 minutes for grill marks. When the fish is almost done to your preference, open the grill and flip the fillets back to the top side directly on to the grill for top side grill marks. The fish is nearly done so it should not stick at this point, and you get the nice grill marks for serving.
I grilled our salmon for 9 minutes total ~ 4 minutes each side, and 1 minute for grill marks. The iPhone timer is a handy grill assistant! If your fish is thin or delicate you could skip the grill marks and just bake on the citrus slices ’til done.
The grilled asparagus, pineapple, salmon and wild rice pilaf made for a pretty dinner plate and we wasted no time at the table, so no plated beauty shot this week. Just trust me ~ it was good.
