{almost} famous key lime pie!

It unofficially starts tonight ~ and we’re marking the occasion with my {almost} famous key lime pie! It’s {almost} famous, because it’s my version of the top-secret Margaritaville Key Lime Pie recipe.

We celebrating the start of my favorite time of year ~ warm weather concerts, road trips, cookouts, shorts, flip-flops, and all things good in bluwaterlife! 🙂 And how great that Jimmy Buffett is kicking off his concert season with a free show in Key West tonight too? We didn’t win tickets, but will be watching it on Margaritaville TV ~ with cheese burgers and Margaritaville Key Lime Pie, or at least my {almost} famous version.

The pie needed to chill, so I made it in advance. Then of course I had to test it ~ so it made a lunch time appearance.

I’ve had Key Lime Pie all up and down the Florida Keys ~ and I think Publix makes a perfectly good pie ~ but this one is really good ~ and so easy!

I can’t reveal my sources, but I will tell you it’s only THREE INGREDIENTS baked in a traditional graham cracker crust. So easy, I’m just going to give some basic instructions ~ not even a recipe really.

Yep, THREE INGREDIENTS!! Six egg yolks, 2/3 cup key lime juice (I use Nellie & Joe’s from Publix) and two cups of sweeten condensed milk ~ that’s it! Mix just to blend with a hand mixer on medium speed.

Make your own graham cracker crust or use a store-bought prepared crust. I made my own so it has a bit extra around the edges. One cup graham cracker crumbs, 1/4 cup sugar, 1/3 cup melted butter and mix to the consistency of coarse sand. Lightly spray your pan with non-stick spray before making your crust to help with slicing and serving. Press into your pie pan and bake about 8 minutes at 350 degrees until golden, and then allow to cool. Fill the crust and bake at 350 degrees about 20 minutes until the filling jiggles just slightly. Allow to cool and then chill several hours or over night.

I like to top with whipped cream, and make it with my favorite kitchen tool ~ my immersion blender with the wisk attachment. Yes, you can wisk by hand, but I love this tool. Whipping cream, powdered sugar to taste , dash of vanilla and it’s whipped cream in 30 seconds!

Dollop or decorate as you please. I do the plastic bag piping trick ~ snip off a TINY corner and pipe around the edge of the plate a few times and then sprinkle with some reserved graham cracker crumbs. That’s it ~ ready to serve!

Whether you call it my {almost} famous key lime pie ~ or Margaritaville Key Lime Pie ~ it’s easy and really good! I can’t reveal my sources, and there may have been a top-secret cookbook involved but it’s all in fun. 🙂

Time for boat drinks, cheeseburgers and dessert ~ bring on that season of fun!
