Trying to decide on a new Christmas cookie recipe is a lot like vacation planning, but less expensive. Lots of browsing online, glossy pictures and tempting teasers, asking friends for recommendations and finally committing to a destination ~ or a recipe ~ hoping it lives up to the advertising.
Last year I made Martha’s Chewy Chocolate Gingerbread cookies, and they were a hit with friends and family. This year I wanted something I could do in a single evening, so I opted for these Red & White Velvet Cookies dipped in white chocolate. I had both the “from scratch” recipe and the “short cut” version that starts with a boxed cake mix. It was such a busy week ~ six holiday events in one week ~ so I went for the short cut version!
Easy dough, mixed by hand, rolled into logs and chilled. Then sliced, baked, cooled and white chocolate dipped ~ six dozen ~ all in one evening.
And they were great! Perfect for the holiday cookie swap ~ yeah!
I packaged up the next morning ~ using my standard white bakery boxes. Yep, same as last year, but after changing up the cookie it was easier to stay with packaging I know works ~ and I keep the boxes on hand year round. I added my bluwaterlife embossed seal, some silver ribbon and headed out to the cookie swap.
We sampled all the cookies ~ there were some family faves, some newcomers and all different! Bluwaterguy enjoyed a cookie or three later and pronounced them all tasty ~ and of course he loved mine ~ he’s a smart man. It was fun meeting some new faces and seeing others from last year too. My friend Val from a scrumptious life was our hostess and did a lovely lunch. We all went back for seconds ~ always the sign of a successful spread!
I still miss doing the all day bake-a-thon that used to be an annual family event, but this is a nice new tradition. I am adding to my cookie repertoire, and these Red & White Velvet cookies may reappear for Valentine’s Day. I made Val’s shortbread cookies for this year’s Tiki Bar Tailgate, so who knows where the Christmas cookies may show up next!
Now if I could only decide on a vacation plan as easily ~~~
