Ice.Cream.Pie. Oh my ~ that’s a happy combination of goodness. Make that key lime ice cream pie, and I’m hooked :-).
After a busy week (and hectic business travel) all I wanted was a “4F weekend” ~ friends, family, food & fun. In this case, college football on television supplied the fun. And after some Food Network inspiration and conversation with my friend Kimberly, ice cream pie supplied the dessert for football watching. There were cheeseburger sliders for the afternoon, and then came the dessert competition!
I love the Publix Key Lime fro-yo, and thought I would try it with some mix-ins as an ice cream pie. I have some 6″ glass pie dishes that are just the right size for small servings. With Kimberly’s help I decided on 2 versions ~ pie #1 traditional graham cracker crust with white chocolate morsels and crumbled cone mix-ins ~ pie #2 chocolate graham cracker crust with coconut Mounds bar mix-ins ~ sigh, how bad could that be? For the dessert competition I gilded the lily with some fresh whipped cream ~ swoon!
With the ingredients on hand, one of these ice cream pies would be less than 20 minutes start to finish ~ including making and baking the graham cracker crust ~ and most of that is time for the crust to cool. Using a pre-prepped store crust, I could knock this out in minutes. Then back in the freezer to set, while it was time for the sliders, beer and more football. Here’s the before and after on the pie creations ~ oh, and a glimpse of the cheeseburger sliders ~ nothin’ fancy, but still a darn good nosh for football watching.
In the end, both of our teams won (yeah!) ~ and the winner of the key lime ice cream pie competition is ~ of course, a tie! Which means OT and another round of dessert to decide the win. Headed back the freezer now ~~~
