It’s been hectic lately in many ways, and my (mostly empty) pantry is showing the effects of sporadic grocery shopping.
Finally with a day to catch my breath, I decided to improvise with random pantry bits and devise something to qualify as comfort food.
I can always come up with chicken soup, with my homemade stock stashed in the freezer…then I found a forgotten but interesting rice blend hiding behind a box of pasta and decided to try an all-in-one rice dish.
And with Trader Joe’s brownies in a pouch, I had a fall back if the rice dish didn’t work out.
I’m a “mise en place” kind of cook most of the time…especially if everything else is whirling around…so here’s the prep tray. I decided to do the brownies cupcake style with chocolate ganache. I also found some walnut pieces and threw that on the tray for grins.
The rice dish is a Trader Joe’s brown rice and grain blend. I added carrots, celery, my stock & chicken from the freezer…then let it go until the liquid was absorbed…and it was perfect! Score…and definitely lunch tomorrow.
The brownies are always a success, and did not let me down. Usually all you have to do is dump the pouch contents in an 8×8 pan and bake…no mixing bowl required. I wanted to try the batter in the silicone cups, and they baked up perfectly. Still with the just right fudgy, brownie texture. I chopped up leftover baking chocolate for ganache, made with half & half (always on hand for coffee!) rather than the standard heavy cream…and that too worked.
Added the walnuts on top…though I could also see these brownies working with sliced fresh strawberries or some other goodie. I’m down for dessert in April for THE Book Club…and thinking these may do the trick!
So, after my pantry improv I was happy with the results and came up with a couple of new tricks. I also covered lunch today and tomorrow, and made Bluwaterguy happy with chocolate ganache.
But I still didn’t make it to Publix for real grocery shopping. Which means I HAVE to go one night during the week. I don’t mind so much now 🙂 .
