Sometimes even simple and classic needs a re-look.
I was foraging for an afternoon snack that was likely also going to do a stand-in for dinner, thanks to poor time management on my part today! I spotted the jar of homemade pepper jelly from my neighbor Janice in the fridge…and a carton of cream cheese on the shelf below.
If you grew up in the south, you likely remember the classic ~ pepper jelly poured over a block of cream cheese, and surrounded by crackers ~ one size fits all, waiting to be devoured by hungry tailgaters and partygoers everywhere. I usually serve it in a bowl ~ cream cheese pressed into the bottom and up the bowl sides, with pepper jelly spooned into the bottom indentation ~ which also makes it easier to manage the quantity and presentation. It’s an appetizer staple, anyway you serve it.
But, for whatever reason, I don’t think of it as single servings. Peanut butter and crackers, sliced cheese and crackers, even salsa and crackers, but not the standard pepper jelly and cream cheese spread on individual crackers ~~~ until today! Janice’s pepper jelly is delicious, made from her own home-grown peppers with a nice blend of heat and sweet, and I had the rest of an appetizer plate in the fridge and pantry. A few crackers, an apple, some cashews and a cold brew ~ done and delicious.
Sometimes even simple and classic needs a re-look. Glad I had that delicious thought today 🙂 .
