I love different kinds of salsa, and I LOVE, LOVE, LOVE grilled pineapple. So I had to try this recipe for Grilled Pineapple Salsa – and it’s a keeper! Great with chicken or fish…and more. We enjoyed it with grilled brick chicken and a nice sangria.
Grilled Pineapple Salsa
6 to 8 grilled pineapple slices – diced after cooled a bit
1/2 of a large purple onion – diced
2 jalapenos – seeded & finely diced
handful of cilantro – medium chop
…..mix all the chopped ingredients
season with……
2 tablespoons olive oil
2 tablespoons unseasoned rice vinegar
salt & pepper to taste
juice of 1 lime
…serve at room temperature

And here’s a bonus….
The next night, dinner in 15 minutes! I chopped up some of the left over grilled chicken, added some of the grilled pineapple salsa…..smeared a couple of tablespoons of barbeque sauce on a pita….added some shredded gouda….and threw it in the toaster oven on my small pizza stone for a few minutes to bake. Pour your favorite brew and it’s a bluwater moment…enjoy!
