Happy Cinco De Mayo ~ the day folks in the US celebrate a love for Mexico and especially a love for margaritas!
The bluwaterlife house margarita is great anytime, but with a pot full of fresh mint outside, I’m going for a minty twist on the traditional frozen. Bluwatermom and her new/replaced knee are on the mend and it is a beautiful day outside, so we enjoyed a plate of nachos and frozen drinks. The recipe works well with or without out alcohol, so everyone can enjoy. This is a riff on Fiona’s Frozen Minty Lime Mojitos ~ with tequila & triple sec instead of rum and lightened up on the mint flavor ~ still super refreshing.
Frozen Mint Margarita
6 oz frozen limeade concentrate
3 oz white tequila (1 oz shot per drink)
1 oz triple sec
3 oz water (half the limeade can)
8 fresh mint leaves
2 cups of ice (more or less for desired consistency)
Combine in a blender jar and blend until smooth. Makes 3 drinks.
Garnish with lime
I’ve been here with Bluwatermom since the end of March and will be going home soon ~ when she is comfortable driving with her new knee. She cared for me for months during my nasty broken leg, and being able to stay here during her recovery was part of my career decision ~ I am so glad it has worked out and she is finally feeling better.
May is a busy month, with so many events ~ birthdays, Cinco de Mayo, Mother’s Day, weddings, Memorial Day, JB concert, and vacation ~ whew! It’s my favorite time of year, and we’re just getting started 🙂
